The Northern Lights

(a Letterbox Farm Collective refresher)

Makes 1 single cocktail

2 ounces gin
1 ounce lime juice
¾ ounce lovage syrup (recipe follows)
½ ounce white Lillet
Dash of celery bitters
1 bunch borage, leaves and flowers

Combine all wet ingredients in a shaker. Add the borage and plenty of ice. Shake well and strain into a coupe or rocks glass.

LOVAGE SYRUP

2 cups chopped lovage
1 cup sugar
1 cup water

Pack a quart jar tightly with chopped lovage. Bring sugar and water to a simmer, stirring to dissolve sugar. Pour the hot mixture over the lovage and seal the jar. Allow to cool, then refrigerate jar overnight or until syrup is cold. Strain before using.
